Zucchini Recipes
Chocolate Zucchini Cake Cake: 1 c. butter 1 ¾ c. sugar 2 eggs 2 ½ c. flour ½ tsp. baking powder 1 tsp. baking soda 4 tbs. cocoa 1 tsp. cinnamon ½ c. sour milk 1 tsp. vanilla 2 c. zucchini ½ c. nuts 1/3 c. chocolate chips OR Frosting: 2 tbs. butter, browned 2 tbs. milk (use Lactaid milk if lactose intolerant) 1 tsp. vanilla Powdered sugar Preheat oven to 350°. In a large bowl, cream butter and sugar. Mix in eggs. In a smaller bowl, combine flour, baking powder, baking soda, cocoa, and cinnamon. Mix flour mixture with egg mixture. Add sour milk and vanilla. Fold in zucchini and nuts. Pour into baking dish and bake for 35-40 minutes. Sprinkle 1/3 c. chocolate chips or frost. To make frosting, combine butter, milk, vanilla. Add powdered sugar to desired consistency.
