Sausage-Stuffed Zucchini


4 medium zucchini
8 oz. Italian sausage
1 yellow onion, chopped
3 tbs. minced garlic
2 tsp. basil
¼ tsp. thyme
¼ c. bread crumbs
¼ c. Parmesan cheese, grated
¼ tsp. salt
¼ tsp. pepper
1 egg

Preheat oven to 350°. Cut each zucchini in half. Place in pan, cover with water, and bring to a boil. Simmer 6-8 minutes. Drain and rinse. Scoop out the zucchini’s pulp, leaving a ¼ inch border. Put zucchini upside down and allow zucchini to drain. Cook sausage meat for 5 minutes. Add onion, parsley, basil, and thyme. Cook for another 5 minutes. Remove meat from the heat and add bread, 2 tbs. of Parmesan cheese, and salt and pepper. Mix egg and stuffing mixture. Put the stuffing into each of the zucchini halves. Sprinkle parmesan cheese on top of the zucchini and stuffing. Bake for 35-40 minutes, or until the filling is slightly browned.
