Zucchini Fritters 2 medium zucchini 1 carrot 1 egg, beaten ½ c. flour Olive oil Grate zucchini and carrots. Mix together all ingredients. Pour ½ in. oil into a skillet. Drop by tablespoon into the oil and fry until golden brown. Drain on paper towel.
