Zucchini Moussaka


3 medium zucchini, peeled and cut into ¼ inch pieces
2 tbs. olive oil
1 onion, sliced
1 lb. ground round
1 8-oz. can tomato sauce
1 clove garlic, minced
½ tsp. salt
¼ tsp. cinnamon
1 c. cottage cheese
1 egg, slightly beaten
¼ c. Parmesan cheese, grated

Preheat oven to 350°. Lightly brown zucchini and onion in olive oil. Place zucchini in the bottom of a 9x13-in. baking dish. Brown beef, drain. Into the beef, stir in tomato sauce, garlic, salt and cinnamon. Pour mixture over zucchini and onion. In a bowl blend egg and cottage cheese. Pour over meat. Sprinkle cheese on top. Cook for 30 minutes.
