Zucchini and Onion


6 medium zucchini, sliced
¼ c. onion
4 tbs. olive oil
2 tbs. parsley, chopped
2 tomatoes
Salt and pepper to taste
½ c. Parmesan cheese

Preheat oven to 375°. Thinly slice onion and tomato. Boil squash in salted water until tender. Drain. Sauté onion in olive oil and add in parsley. Remove onion and parsley from heat. In a baking dish, layer zucchini, tomatoes, and onions. Sprinkle salt and pepper to taste. Add in Parmesan cheese. Repeat layers. Bake for 20 minutes.
