Zucchini Soup


7 chicken bouillon cubes
4 c. water
6 medium zucchini, sliced thinly
2 carrots, grated
1 onion, diced
8 oz. cream cheese, cubed
Salt and pepper
1 tbs. fresh chives (optional)

Boil water and chicken bouillon cubes. Once the cubes are dissolved, add squash, carrots, and onions. Cook until vegetables are tender (about 15 minutes). Puree mixture in a blender. Slowly add in cream cheese. Add salt and pepper to taste. Sprinkle chives onto the soup.
