Zucchini Soup


4 small zucchini, sliced
2 green peppers
3 yellow onions
4 c. chicken broth
2 tbs. parsley, chopped
1 tsp. salt
½ tsp. black pepper
1 ½ c. sour cream

Bring zucchini, green peppers, onions, and chicken broth to a boil. Simmer until vegetables are tender (about 15 minutes) on low heat. Add in parsley, salt, and pepper. Strain out the broth into a bowl and blend the zucchini, green peppers, and onions in a blender. Add in 1 cup of the broth. Puree the broth and vegetables for 30 seconds. Stir until smooth. Add sour cream and whisk. Heat the soup, but don’t let it boil.
